Between my blogging, Meredith's paintings, Max's playful romps, and Bell's subtle yet inescapable mischief, it's a whirlwind of activity. So, knowing how to quickly whip up delicious meals in under 25 minutes is nothing short of a culinary lifesaver. My mission today is to immerse you in the world of quick and easy dinner dishes! Stir-Fry's & Easy Asian Cuisine
At the top of my list for quick dinners is a good old-fashioned stir-fry. Whether you choose chicken, beef, tofu, or all vegetables, a stir-fry is quick, simple, and super customizable. You simply sauté your protein and vegetables of choice, add your sauce (teriyaki, soy, or hoisin are top picks) and let it all sizzle. I remember one evening when Meredith and I decided to have a stir-fry cook-off, and let's just say that our cat Bell ended up dining like a queen that night.
Wraps & Sandwiches with a Twist
Next, we have wraps and sandwiches,a variety that's amazing for those who want to keep things light yet hearty. A simple baguette, some prime deli meat, fresh lettuce, tomatoes, and a spread of your choice, voila! You've got a French-style sandwich. Wrap your favorite fillings in tortillas, and you've got a fantastic burrito. The trick here is to make sure you've got a balance of protein, vegetables, and a tasty dressing. This reminds me of a time when Max, our Labrador, managed to nick a whole bowl of spaghetti Bolognese from the table. He had the tomato sauce moustache for the whole day!

Whenever Meredith is feeling a bit under the weather, which luckily isn't often, a bowl of my chicken noodle soup is all it takes to see her giving me that million-dollar smile again.

They're easy to assemble and a great way to indulge in a rainbow of vegetables. I can't count the number of times we've sat on our lovely porch, feasting on simple salads under the Omaha sky.
